Marry Me Steak Sandwich

   Remove the steaks from the refrigerator 1 hour before cooking to bring them to room temperature. Season all sides generously with salt and black pepper.

   Heat a large skillet over medium-high heat and add the olive oil. Place the steaks fat cap side down for about 1 minute to render some fat. Then cook the steaks for 2-3 minutes per side, or until they reach your preferred doneness. If using butter, add it during the last flip and baste the steaks with the melted butter. Remove from the skillet and let rest for 5 minutes before slicing thinly.

   In the same skillet, add the sliced onions with 1 teaspoon of salt. Cook over medium heat, stirring occasionally, for 10-15 minutes until soft and golden. Add 1 tablespoon of balsamic glaze, stir, and cook for another 1-2 minutes until the onions are deeply caramelised. Remove from the skillet and set aside.

   Slice the ciabatta loaf into sandwich-sized pieces. Toast each piece in a skillet, grill pan, or toaster until golden and crisp.

   Spread lemon herb aioli evenly on the bottom halves of the toasted ciabatta. Layer with fresh rocket, sliced steak, caramelised onions, and a drizzle of balsamic glaze. Top with the remaining ciabatta halves. Slice the sandwiches in half and serve warm.
