   Dry your prawns, then set them on a tray and lightly spray with cooking oil. Combine all the spices in a small bowl, then sprinkle half that mixture all over the prawns on both sides.

   In a separate pan, cook the fettuccine as per packet instructions to al dente. Drain and set aside.

   Tip: Try to time pasta to finish for step 5

   Heat a large sauté pan over medium-high heat and add in the olive oil. Cook the prawns for about 1 minute per side, then remove to a plate and return the pan to the heat. Add a little extra olive oil if necessary, then add the minced garlic.

   Tip: Don't overcrowd the pan, cook prawns in batches if needed.

   Cook for ~2 minutes until the garlic is fragrant and starting to brown, reduce heat to medium then pour in the heavy cream and the remaining spice blend. Stir well, scraping up any bits on the pan. Bring to a simmer then stir in the parmesan.

   Lower the heat to medium-low and simmer for 3–6 minutes until the sauce is slightly thickened. Add the prawns back into the sauce, then the cooked fettuccine and toss to coat.

   Tip: Add a splash of pasta water if the sauce is too thick.

   Cook for another 2–3 minutes to allow the pasta to absorb the sauce. Sprinkle with parsley and extra grated parmesan and serve immediately.
